Traditional Balsamic Vinegar of Modena P.D.O. Extravecchio, that takes its name from the fact that it's very aged, is taken from barrels that have been in operation for at least 25 years.

 The Traditional Balsamic Vinegar of Modena P.D.O. comes from the long and natural ageing of cooked must from typical Modena grapes inside small barrels kept by families in the attics of their homes.

Deep, intense dark brown in COLOUR, it manifests its DENSITY in a correct, flowing syrupiness. It is characterised by a complex, penetrating FRAGRANCE with evident, but pleasant and harmonious, acidity.

Of traditional and inimitable sweet and sour well-balanced TASTE, it is generously full-bodied and savoury with velvety nuances, in accordance with its own olfactory characteristics.

CULINARY USE: in gastronomic use, it is an extremely ductile product, but also a touchy one.Ductile thanks to the perfect harmony and balance between the sweet aromatic and acetic components, which make it suitable for pairing withany dish from starters to desserts, from meat to fish, from elaborate and complex dishes to simpler ones.
At the same time, it is touchy because, being primarily a condiment and not an ingredient, it prefers to be used purely on the table.

The story of the bottle of "GIUGIARO”

Imitations have always been a big problem for the recognition of authentic Traditional Balsamic Vinegar of Modena PDO. In 1987, the young automotive designer Giorgetto Giugiaro, now world-famous, was commissioned to design a bottle shape that would become distinctive and even the brand name itself for the product.

The result was a spherical-shaped ampoule, made of solid transparent glass with a rectangular base, whose style is reminiscent of the flask used by tasters.

This bottle, described as of "Giugiaro", is the only official bottle. 

The product is only bottled after the approval of expert tasters and only by a bottling centre specially authorised by the MIPAAF and subjected to chain controls. The bottle is sealed with the special numbered seal that is the only real guarantee of authenticity and quality.
