Our selection Oro is not all bottled. Part of it is dedicated to this special series, a tribute to grandparents Renzo and Gustavo, which is aged for a further 2 years in centuries-old barrels, rich in history and giving it a unique caramel note, greater density and a slightly lower acidity of 4%. At the end of the aging process, it is bottled in the same bottles that Renzo and Gustavo used to share their personal selection of black gold: “Calamaio” of 100ml and “Ovalina” of 40 ml. 

This Balsamic dressing is at his best with Parmigiano Reggiano and pear shavings, mature cheeses, fresh strawberries, risottos and escalopes, grilled fillets, foie gras, pancakes with squash blossoms, meat carpaccio and fish tartare, sushi and sashimi. 

Its high density makes it easier to use for garnishes and decorations, and thanks to its low acidity it is less strong on the palate while maintaining the same aromatic spectrum as the Oro from which it derives.
